Can anyone make any recommendations for a nice place to stay over xmas in Phuket? I am going with my mate and want a nice festive meal and nice surroundings whilst beings with walking distance but not hearing distance to Patongs nightlife.

Are there any champagne brunches on the island over xmas?

This is probably a windup, but I'll bite.

Number 1, your chances of getting a room on the Island over Xmas is probably nil. They've been booked out for months. Maybe you might get a late cancellation, but it won't be a case of pick and choose. You would have to take whatever is available. Good luck!

The second part of your question - if you did manage to get into a hotel, avoiding the very expensive, compulsory Xmas dinners is nigh-on impossible. If you want to eat a brunch with champers I'm sure any good hotel restaraunt would oblige.
