Minced Pork?

You can do anything that you would normally do with minced beef. My ex g/f wouldn't eat beef, so I made everything from spag bol and lasagne, to chilli con carne and cottage pie using pork.

Its surprising that it doesn't taste that much different, as the above are very flavoursome dishes where the meat takes second place to the seasoning, herbs, and spices - except the cottage pie where the meat is secondary to the potatoes and vegetables.

Another good one is a pork cobbler - if you can be arsed to make the scones.

Season with some salt, pepper, nutmeg, chopped onions, 1 egg and some breadcrumbs,

preboil leafs of white cabbage, fill and roll them with your seasoned minced pork.

Put these rolls very tight in a pot or pan and fry them a bit. Add some water and Knorr pork.

Simmer for about one hour, take the buggers out of the pot and thicken your sauce.

Some boiled potatoes are nice.

Or...

use the same minced pork mixture and stuff some bell peppers with it, procedure same as above, instead of water use some peeled, canned tomatoes, goes perfect with rice(my wife likes it :o )

Minced pork is the basic ingredient in many types of sausage. Maybe try mixing some sage in it along with a bit of salt and sugar (molasses if you can find it or maybe the type of syrup you can buy for pancakes). Then form them into small patties.....small hamburger like patties. Put them in plastic wrap for a day or two in the fridge.......fry them up in bacon fat and see what happens. This process is simple and avoids messing with casings. But it will not have that great smoky taste......have to smoke it for that. By the way, that stuffed pepper/tomato thing looks great.
