You can also baste fried eggs by placing a cover over the pan during cooking. This is steam basting, and is a technique often used in restaurants.

This is actually very good. Waith til the eggs are not yet cooked, turn off heat and put lid on while you're doing other things - only for a min or 2 max - and off you go with a couple of perfect fried eggs. I also use the same technique for scrambled eggs.
