I'm travelling to Bangkok form Australia on the 28th of Dec and leaving from Bangkok on the 2nd of Feb. Which is a total of 36 days I think.

Within this time however, I'm planning a 4 or 5 day visit to laos. If i have a ticket to Laos booked before reaching Bangkok, does this mean that I will not need to get a tourist visa? As i will be given another 30 days on re-entering Thailand?

Yes . If you have an air ticket out of Thailand within 30 days of arrival you will be ok.

As you said , you will get another 30 days when you return.
