Well you can get muesli (in bangkok anyway, guess CM will be the same). Not sure i have seen muesli bars although have to admit have never really looked. Is possible but can't be certain you will find any.

I guess the other thing that comes into question is whether I would be allowd to bring Muesli bars into Thailand from New Zealand. I know that the New Zealand border control wouldn't allow me to bring them into NZ from outside of the country. Any ideas on how the border control in Thailand views such food being brought into the country?

Put them in your suitcase, should be no problems when entering Thailand.

Not sure about leaving NZ though.

No problem bringing all you want into Thailand. In the unlikely event that they open your luggage and suspect you of selling the bars, simply say you love to eat them. I think I recall seeing such bars in the farang oriented markets.

Jingthing is right about you getting them in Thailand, farang food cost you a lot more here.

Maybe a business opportunity for some entrepaneurial Thai with access to the makings of decent Muesli bars

There are lots of good quality muesli bars all over in Chiang Mai. Rimping Supermarkets all have them and a few health food stores like Aden and Baan Suan Pac.
