Forgive my ignorance, but I'm a bit worried about this and would like to get some solid info. I have taught in Thailand with a visa provided and managed by the school, but it expires at the end of June and my contract at the school is expiring. Basically, I want to stay but avoid doing 15 or 30 day visa runs, and I've heard that it might be possible to fly to a nearby country, visit the Thai consulate, and receive a 2 month visa that can be extended for another month, before going through the whole process again. Is this correct? Can anyone shed any light on this for me? Thanks in advance!

Yes, if you look a little farther down, you'll see reports of going to Laos. It's simple to get a double entry tourist visa, that is also discussed.

The simple version is, you will get a tourist visa, get stamped in for 60 days, before the stay expires, you can go get an extension for 30 days. If it's a double entry tourist visa, then you would cross the border before the validity date expires, and use the second visa entry. You can get almost six months with the two visas and two extensions.

A single entry in KL or Penang or a 2 entry in Vientiane.

It might be best to get the 2 entry in case things don't work out and you need more than 90 days. For 1000 baht more it would be good insurance as a just in case measure.
