I often hear people start sentences with what i think is 'พอดี '

can anyone explain its meaning and how to use it?

Here are my (not literal) English translations of พอดี when used at the start of a sentence:

พอดี can also mean "just in time" or in the case of clothes (pair of jeans, shirts etc) to "fit well"

Fit = พอดี ..... phaaw dee

พอดี .... phaaw dee = just enough; good enough; just right; just sufficient,

กระชับ ..... gra chap = to fit closely

คู่ควร ....... khuu khuaan = [is] fit; suitable; proper; appropriate

ทำให้พอดี ....... tham hai phaaw dee = to fit

แนบเนื้อ ....... naaep neuua = to fit closely to the body

ปฏิกิริยารุนแรงทางอารมณ์ ...... bpa dti gi ri yaa roon raaeng thaang aa rohm = phrase, formal a fit

อาการเป็นลม ........ aa gaan bpen lohm = a fit, seizure, spell, or attack (the medical condition)

At a guess, I think PAW DEE JA พอดีจะ means you're just about to do something. Without the JA , means you've just done something

I find it is sometimes used to preface and/or soften some crap excuse as if the happening were just some fluke and nothing to do with bad planning.

sometimes we put this word in the beginning of the sentence because

- we feel that the event we will talk to is happening or has just come about.

- or we are going to do the event

however, you can skip this word because it's on the lips of all Thais

usually, you will encounter เผอิญ in the beginning.

เผอิญ ~ พอดี are analogous.
