Hi i arrived in Bangkok with a 30day visa stamp on arrival.

My passport is german.

Can i expand those 30days without leaving bangkok, just like on a tourist visa?

You apply for an ED visa from a Consulate outside Thailand so paperwork for that is what you should now obtain and then make your visa trip.
