I plan to retire to Thailand next year, and understand the requirements for this.

I intend to travel all over the country for the first six months or so before deciding where to settle.

I wil be staying in hotels during this time and am wondering if it is o.k. to use a hotel for 90 day adress reporting ?

Suspect it may depend on type of entry. If you obtain a retirement OA visa from home country expect hotels should be allowed but if you plan to extend inside Thailand you might not meet conditions without a more permanent abode. If you have a friend here that could contact you, you might want to use that address until you settle in.
