I plan to go for a visa extension based on retirement using the combination method of the income letter from the consulate and my bank account balance. Do I still need to get a letter from the bank (even though the money does not have to be aged), or is my bank book enough proof of the balance?

Also what are the days the immigration offices are closed over the New Year holiday?

The letter is to indicate account balance at the time of application so yes it is required. Immigration has not published any holiday notice that I am aware of, and have not seen any report of seeing such a list, but is always closed on official holidays

I just did another annual extension based on retirement and useing the income statement with well over the minimum income.

I was still required to get a bank letter for my bankbook balance. Not sure what they would have done if I didn't have a Thai bank account.

This was in the Pattay/Jomtien office three weeks ago.
