I bought 7 Ultimate because of it's language capabilities. I can change the language to Thai but haven't been able to type in Thai language. Any ideas?

You need to add the Thai keyboard in Control Panel.

Control panel > clock, language, region > change keyboards or other input methods > change keyboards > add > Thai Kedmanee

You did not need Ultimate to type in Thai - just to change the system to Thai if you do not want to buy a Thai only system. As said you can type any listed language with any version of Windows 7.
