I done that on my last stay. I got 30 day stamp when i landed, jumped the boarder to get my extra 15 days and it ran out the day before i was flying. Basically it ran out at 00:00 and i was flying at 02:30. As soon as you go through immigration and get that stamp in your passport your kind of in limbo. Its kind of the same when you do a boarder run and your between gates.

When you get that stamp from immigration your not overstaying, your out of the country before your visa runs out.

I imagine this could become really lucrative when flights are delayed due to technical issues, strikes, weather, volcanic activity Etc.! ;) Immigration staff could run back into the "limbo zone/duty free areas" and bust every body there as the days went by! ;)

2 times I have overstayed by one day. I told immigration I made a mistake when I walked up. Never had to pay a fine.
