You get a permitted to stay stamp. Visa exempt entry is one time on entry so an exit of country would be required to obtain a new entry and allows 15 days by land or 30 days by air for most nationalities. No cost.

A tourist visa allows stay of 30 or 60 days that can be extended one time for another 30 days. More than a single tourist visa can be issued at same time.

I think it is also worth mentioning that dependent on where you are travelling from and the duration of your stay, if you do not have a "tourist Visa" and are relying on a "visa exempt" entry that the airline you are travelling with may not let you board the plane if you do not have a return ticket or evidence of onward travel within the 30 day visa exempt entry period.

 

Tourist visa exemption- "passport holders from 41 countries and 1 special administrative region – Hong Kong SAR – are not required to obtain a visa when entering Thailand for tourism purposes and will be permitted to stay in the Kingdom for a period of not exceeding 30 days on each visit.

Or else your need a tourist visa before arrival that allows you to stay 30 or 60 days and can be extended one time for another 30 days at the local immigration office.

At the airport, you are given 30 days for exemption visa or 30/60 days on a normal tourist visa.
