August 6, 201213 yr There's only one way to make tofu: take soya bean milk (made from ground up soya beans and water), add a coagulant (usually calcium sulphate), gather the coagulate and press it to the required level of dryness. Giant food conglomerates and small, domestic producers use exactly the same process. However, tofu from a giant food conglomerate is likely to be much better for you since it's produced in strictly hygenic conditions, and you're much less likely to get food poisoning from it. The only thing to watch out for is that a lot of tofu sold in Thailand is "egg tofu" which contains - not surprisingly - egg. Not so healthy. There's also Thai "fish tofu". I'll leave it to you to guess which added ingredient that contains.
