I'm craving Cassoulet, in the past I've always used dried beans and soaked them overnight, I'd like to experiment with new beans, I love chick peas but I don't think they'd work or would they ?

Can anyone suggest tinned beans that we can buy here that will work ? or dried beans ?

This is the basic recipe I follow any thoughts on Thai herbs or local ingredients I can play with ? I'd like to experiment.

My mother was telling me she was experimenting with a lentil based one with chorizo. I personally love a confit of Duck with/in Cassoulet.

Dried small white beans are available here in chiang mai at Rim Ping and probably Tesco lotus. I don't know where you live. In Bangkok I suspect that Villa will carry them.

white beans for cassoulet are hard to find either dried or canned...best to look in Villa supermarkets and then buy their whole stock to have on hand later...

up where I live in Nakorn Nowhere you can only find AYAM brand canned beans in tomato sauce and I usually rinse off the sauce then use as usual in bean recipes...OK for bean salad...

Here in Chiang Mai we can buy duck confit legs that are locally made.

Also, we have used a dried white bean here which turned out okay. The garlic sausage we had wasn't tasty enough.
