There are many ways to make this and it's pretty easy...so easy in fact that one doesn't even have to turn on a stove. The wiki link is below and so is one of me & the missus favourites. Local fisherman and her wife prepared the best cheviche I had ever eaten. This came with an twist. The lovely wife made an orange juice, which she was very, very proud of. Once I saw that she used well water with the juice I first tried politely not to drink the juice. She looked depressed and I decided to drink the lovely orange juice. The next two days were not the best ones in my life, but at least the lovely and profoundly hospitable couple were happy Making cheviche along other foods.
