Ok, I maaay have a bit too much time on my hands lately (being low season and all), but anyways here's a great, great, easy & economical recipe for making amazing Greek grilled chicken or pork at home:

Greek Chicken or Pork-

Ingredients (serves: 4):

1-2 lbs chicken thighs or breasts, cut into chunks (kebabs) or medallions (or pork)

1 onion, sliced

1 red or yellow capsicum, cut into 2" chunks

Cilantro

Basil

Marinade:

3 TBS red wine vinegar
1 1/2 TBS white vinegar
1/2 teaspoon Dijon mustard
3/4 tsp salt

1/4 tsp black pepper
1/4 tsp crushed red chilies
4 cloves garlic, minced
3 TBS extra-virgin olive oil
4 TBS any oil
1/2 tsp oregano

1/2 tsp cumin

Preparation:

Whisk all marinade ingredients and place in a glass bowl or zip-lock bag; add chicken (pork), onions & capsicum and seal/cover tightly. Put in the fridge and marinate for 2 hrs- overnight. Grill: You can skewer the meat & vegetables (like in the photo I found) or not. Either way, after you turn the meat, onions & capsicum to their second sides, toss some cilantro & basil sprigs on top for the last few minutes of cooking.

Serve with:

Tzatziki, pita bread, feta cheese, olives, cucumbers, tomatoes, lettuce, rice pilaf- maybe some hummus, tabouli, baba ganoush & other dipping sauces, too.

Many thanks for posting this one.

Just printed it and will give it a whirl at the weekend. Will use the Pork as I have an arthritic condition and my wife reckons eating critters with wings makes it worse. So, Pigs can't fly.....can they?

This marinade is dee-licious! I've been eating it about 3-4 times a week lately, usually with Pita bread & salad. Even my TGF likes it. Hope you do, too!

PS- If you have any left-over's, you can chop them up and add mayonnaise & chopped: celery, green onions & hard-boiled egg = excellent chicken (pork?) salad. Try this amazing Greek dipping sauce:

Tzatziki – Greek Cucumber Sauce

· 1 (6 ounce) container Greek or plain yogurt

· 2 small cucumbers

· 1 tablespoon dill, chopped fine

· Salt and pepper to taste

· 1 tablespoon mayonnaise

1 teaspoon red wine vinegar

1 tablespoon olive oil

Procedure:

Peel, seed & finely chop the cucumbers. Then, squeeze water out as much water as possible. Mix with remaining ingredients; taste and adjust seasoning. Refrigerate (overnight if possible) & serve.
