What if a flight is cancelled and I HAVE to come back in again to spend the night? (WHICH, if you're trying to fly to Manila today, is actually a real possibility!)

They would cancel your departure stamp and give you the same entry you had before you cleared immigration. They would not stamp you in on the other entry of your tourist visa because you never entered another country.
