Bear in mind that many Thai vegetarian restaurants will still use nam plaa and some will also add a bit of pork fat - just for flavour!

I would be really surprised if the "J" places used any kind of meat for any reason at all. I'm not sure about the nam plaa, but the places I go all seem to provide soy sauce instead.

You can ask the restaurant before you order your food if they use nam pla. Nearly all will tell you no!

Yes. I think Millwall is mixing up what regular (non-Jay) restaurants might do for the items on their tourist vegetarian menu and proper Buddhsit-vegan fare, but there is really no doubt as to what Jay food is and isn't. And an actual Jay restaurant is virtually guaranteed not to use fish sauce; it's actually quite strict what to use and not to use, and failing to stick to the rule would be a big deal.
