I have just renewed my passport through my embassy in Bangkok. This means my Thai visa is in my old/canceled passport.

Do I have to transfer the visa to the new passport or can I still travel to/from Thailand showing my visa in the old passport?

If you have a valid visa issued by an embassy or consulate you use both passports to show visa in old passport on entry to the country.

When you leave the country for the first time you will need to show both passports to immigration and the officer will will transfer your entry/permit to stay from old to new one and stamp you out of the country.
