I have a three month, Non-Immigrant O Visa (for the purpose of volunteering), what are my possibilities for extending? Is it possible to get a one month extension by going to immigration? If so what documents do I need to show? Are there any other options?

The longest extension you can apply for is 7 days unless you have a work permit and supporting documents from an organization you are working with.

Do you think it is reasonable to believe that I can do a border run and get another 30 days? Or go to Malaysia for a couple of weeks and apply for a single entry Tourist Visa?

You would only get 15 days at a border crossing unless you are from a G7 country or one that has a bilateral agreement with Thailand. Since you don't any previous exempt entries you can get one.

If you plan on staying longer than 30 more days you should get a tourist visa. You would not have to stay out for 2 weeks unless you want to.

But if his intention is to continue doing volunteer work (??) would a visa exempt entry or a tourist visa be correct options?

He wasn't very clear about his plans and I know you stated he would need a WP and documentation from his organization to get an extension, but it seems he may be thinking he can carry on with his work using the visa exempt entry or tourist visa.
