I have a lot of Thai stamps in my passport but they are all for visits under one week. I have about 6 visits so far on my current passport. I have been in Thailand for a few days and going to Cambodia and want to make a couple more small visits to Thailand over the next two months. If they really actually look at my entry and exit dates or if their computers show the cumulative time I have been on Thailand over the last couple of years then it will be obvious that I am a tourist and not a resident. But if they just look at the number of stamps without adding the dates together then maybe it will look like a lot.

Does anybody have recent experience crossing at poipet with a lot of prior stamps lately?

Your short stays will not be a problem. They are not going to be counting visa exempt entries.

They will be looking for those staying the full 30 days and going out and then immiediately back into to the coutnry for another 30 days.
