Have a non-B expiring in September, want to stay until November

I have sort of a complicated issue regarding my visa. I am currently here teaching English on a non-b visa, expiring in September. I plan on leaving Thailand to return home in November. I have not yet told my school that I am leaving in November, and they are (very slowly) working on my work teacher's licence/permit paperwork.

My question is if I am leaving in November, is it best to get my work permit and the extension stamp, and then tell the school I am leaving (so that my visa won't expire before November), or should I let them know-cancel my work permit and just work on a tourist visa or education visa or something until I leave (if that's even allowed). I think the easiest for me would be to have the work permit and everything so I don't have to worry about it, but I love my school and don't want to be mean and have them do all the work for my work permit just to tell them a week later I am leaving. Although, to be honest, with the rate they are working on the paperwork I might not get it before my visa runs out anyway. But on the other hand, what are my other options? Aren't tourist visas only for 30 days, and isn't there now a problem about getting 2 in a row? I'm from the USA if that makes any difference regarding tourist visas.

What are my possible courses of action besides waiting to get the work permit and then telling the school?

You cannot legally work without a work permit and a non immigrant visa.

Probably best to wait until November to do anything.

You get a tourist visa from an embassy or consulate and it is it gives a 60 day entry.

You can get a 30 day visa exempt entry. On or after the 29th of this month you will be able to get a 30 day extension for them.

Hypothetically speaking, if the school does not get all the paperwork done in time and/or the paperwork all turned in and being processed but I don't yet have my teacher's license or work permit, what do I have to do for my visa? Is there some kind of extension I could get, or would I have to leave the country and get a new Non-B?

If you don't have the work permit the longest extension you can get is 7 days. You would have to go out for a new non-b visa.
