If I intend to leave Thailand and only ever return as a tourist from time to time, yet currently have an ED visa do I have to do anything or can I simply just leave?

ok thanks for that, probably just inform my school obviously. My next question is this. lets say I move to Laos and of course will be there on a tourist visa which I can extend up to 60 days, coming back over the friendly bridge, buy a few things and then return the same day. From what I have read this is what many people do who reside in Laos, however with the new rules on people doing visa runs, will I have issues returning to Thailand over and over even if it is for a single day?

No, you will not have issues, since you will clearly not be entering as a tourist with the intention to stay in Thailand.
