If I was to exit Thailand on one passport and reenter again a few days later via air on a different passport (dual nationality), could they tell at passport control? I'm on my first year of a language ED-visa now and looking to apply for a new one in Malaysia on my other passport then reenter Thailand with a fresh visa. Do any of you see a problem with this? Thanks in advance.

There is no problem. Even if noticed by immigration (and it's unlikely), there is nothing strange with that as it's common for many people.

Works by air, doesn't work when exclusively using land borders, since customs want to see matching entry exit stamps.

If you leave Thailand by land using Passport A, then you will have to show the same passport on entry to Country X as they want to see an exit stamp from Thailand.

Thus you cannot leave country X using passport B as there is no entry stamp, you must also leave on passport A.

If you return by air though, there is no problem, as you are free to swap passports A for B in the plane and can then enter then Thailand on Passport B.
