I have a Non-B immigrant visa (3 months). My contract and work permit expire in the middle of February, but my Non-B visa doesn't expire until the end of February.

My manager claims that I will have to leave Thailand on the same day that my contract expires. Is this true? Or can I stay until my Non-B visa runs out?

You are not on an extension of stay but on a visa entry. Thus you do not have to leave the country and can stay till the end of your permission to stay.
