I used to always have "comfortable" non-ed type visas for Thailand, but my next stay will be shorter so I am considering getting just the tourist visa with three entries.

The thing is, I don't know exactly when I will fly back to Germany and would like to keep some flexibility by not booking the ticket yet. In any case, I plan to leave Thailand before the full 180 days are over.

Do I need to show any return tickets in my application?

I understand how it makes sense for single entry tourist visa, but with the triple entry one I hope it is evident that I will leave and re-enter on a frequent basis anyway. Any experiences? I'm quite positive I can deal with people at immigration, more interested in whether the (European) consulates may deny my application.

Entirely at the discretion of the Embassy / Consulate as to what is demanded.

I have read that at some German Thai Consulates demand outward-bound tickets .

Best you make local inquiry

Thanks for the info. Will try to ask them directly then. Worst case I can always get some cheap AirAsia flight in the neighborhood, I guess.

Actually one more general question on this one:

What return flight they want to see? That I am leaving after the first 60 days or after the full 180 days?

I was told by Thai Airways you can book a single ticket on a triple entry no need to show a return ticket.

I just received a triple entry tourist visa from London, they did not ask for any return tickets or any other flight info. Maybe different in Germany.

For the length of stay I put 3 x 60 days.

A return or onward ticket is not required if you have any type of valid visa or re-entry permit to board a flight.

Some embassies and consulates do want to see a ticket out of the country to issue a tourist visa.
