I'm planning to head to Savannakhet soon to obtain a one year visa based on marriage. Since the pick up time at the consulate apparently is at 1400 hrs would I be able to catch a plane down to Bangkok on the same day from inside Thailand?

There are flights from Nakhon Phanom and Sakon Nakhon late enough to to return to Bangkok. Check for flights on Nok Air to/from Mukdahan that is a fly/ride service via both those airports.

Three options on a working day,

This is somewhat tight:

Nakhon Phanom
16:45h AirAsia

These two filghts should be easy to catch:

Sakon Nakhon
19:30h AirAsia
20:35h NokAir

All flights to DMK (of course).

As usual, UbonJoe's advice is sound. Making late flights is no problem. Check out the Nok Air fly-ride service from Mukdahan. Note that you can ask them to pick you up at the bridge if you are short of time, no need to go into Mukdahan. Just make sure you have a working phone with you.

A simple search on sky scanner harbours the same results does it not.

Even the Nok Air website does not make clear that they will pick you up from the bridge on request. I would be very surprised if sky scanner did. Further, not everyone would know to look for "flights" from a town with no airport.
