I live here in Thailand on a non-O retirement extension. I have a Filipina GF for the last 16 or so months. We spend most time in Thailand and some time in the Philippines, traveling there for holiday several times/year.

She generally gets a double entry 60 day tourist visa in Lao, sometimes getting the 30 day extensions, sometimes not, depending on our traveling schedule.

Is there any way that I could actually personally hire her as a domestic here? Would being an American help at all, Amity Treaty or some such?

You cannot get a work permit for her. Work permits for a Philippine citizen can only be issued for a person working for a registered company.

Only those from a certain nearby countries can be hired without the need for a registered company under the migrant worker scheme.

Marriage is an option. Then she could get a single entry non-o visa and apply for an extension of stay equal to yours as your dependent.
