So, I want to visit Hong Kong once my Thai visa is expired. However, I want to be sure I am allowed to re-enter Thailand after visiting Hong Kong. I have 2 tourist visas back to back and 3 visa exempt stamps from 2014. Will I have a problem coming back to Thailand? And after my 30 days are up on the visa exempt (coming back from HK), can I get another tourist visa in Laos? I have one previously from there.

I want to visit Hong Kong or even Korea but want to make sure I can get visa exempt and then another tourist visa in Laos later on. Thanks!

You will have no problem entering the country.

Same for getting a tourist visa in Vientiane.
