So, I had a single entry 3 month Thai visa (17th February - 15th May).

I am now in Australia currently looking for work. If I cannot find a job in time, I plan on returning to Thailand to do some volunteering work for a few months...

My question is, can I apply for another 3 month single entry visa or is there a limit on how many times you can apply for this per year?

There is no limit on the number of tourist visas you can get. It will be no problem to get another one.

  • You should have no problem applying for a 2nd SETV in Australia.

There is no overall yearly limit, but some Embassies/Consulates do have their own limits.

Working, even without receiving pay, is not allowed without a work permit or a visa issued on the basis of doing volunteer work with documentation from whatever organization you intend to work for.

On the website for the LA Thai embassy, for example, the non-o visa based on doing volunteer work includes the requirement:

Signed letter on the organization's letterhead stating duration of stay, duties, etc. along with a copy of the organization's registration. Single-entry Non-Immigrant "O" visa will be issued for the purpose of volunteering only
