Induction stove with fine grain of temperature control especially at lower temperatures

I picked up an induction stove today, just a small single table top unit so I can run some tests on it.

It has various settings and temperature / power controls. I've done a little reading about induction cooking and also have a whole bunch of pans which are 100% induction compatible.

What I want to do is simmer a pan full of food (chili, stew, etc) for a few hours.

Induction stoves appear to use pulses / short bursts of heating of a few seconds at a time to maintain the temperature when simmering / cooking at low temperatures using a limited number of preset options.

Can anyone recommend an 'ultimate' model which will allow me to not just select some 'braise' type setting and then click 60 degrees C or 100 degrees C.

I have one of those laser aimed thermometers and ran a few tests on this today so I'm looking for a model which will allow me to set the length of the pulse / burst - a professional of commercial model will do just fine but I would like it to be portable, so maybe I will buy 2 or 3 single 'ring' units.

If this is not possible then any other type of counter top unit with a lot of power options or some kind of sliding scale would be suitable. The 60 degrees C, 100 degrees C and higher options on the one I have isn't really going to be good enough for what I need. However I will make a chili and see how it goes. I'm pretty sure I'm going to need a model with more user control available.

So does anyone have any ideas on this ? I know it can be done, it's just a matter of sourcing a Thailand based supplier of a model which does exactly what I want.

You might like to consider getting a slow cooker (aka crockpot), which is specifically designed for that job:

Yes, I've looked at these but they're too slow.

I think I need a professional induction stove.
