Do any stores sell packs of chopped up meats and vegetables, ready to stir fry? This would save me a lot of chopping time.

And give you a good case of indigestion!  Ugh!  Fresh is the best!

Big C and Lotus both have a small range of packs like that.  I very occasionally buy the crispy pork with Chinese kale.

to the OP buy yerself a good cheap chef's knife that's easy to sharpen and chopping veges won't be such a chore...in Thailand the cheap knives don't take an edge very well and that expensive european crap needs a goddam power grinder...

 

also look for a good sharpener...I like the type with the little sharpening 'V' that you drag along the knife edge...works good fer me...
