If I apply for a tourist visa in, say, Vietnam they want to see the travel ticket out of Thailand. Is it OK if this is dated 90 days after arrival in Thailand (which would be legal as long as you extend the visa) or do they expect it to be 60 days only? What if the ticket clearly showed you returning to Thailand 2 days after exiting (i.e. you'd already booked the ticket for your next visa run)?

This would be up to the consulate in question - they all make up their own rules, and change those rules without warning.  The consulate in Savanahket was OK with a ticket under 85-days, a month ago, to be used on my next visa-run.  I don't think they would care about a return-leg of the ticket - just as they don't care about showing 1-year rental contracts in lieu of hotel-reservations. 

 

In general, consulate-personnel are looking to check off boxes:  hotel/rental - check; flight-out - check; money - check; ... etc.
