As already pointed out, not doing a factory reset is a huge risk. Beside the visible app that you uninstalled, there's no telling what might have been installed that you can't see.

A factory reset can be done through the phone's settings. Just remember to save any information, numbers, pictures, etc. that you don't want to lose, as the phone will get completely wiped. I don't think a new SIM is strictly necessary, but simply deleting the app won't be enough, as it might have installed other stuff that you can't see. If unsure, go to a phone shop you trust and they'll help you.

If she actually downloaded something to her phone, make sure to do a factory reset. You don't want spyware or a keylogger on it.
