If you're referring to a witness's grand jury testimony, they are not "defendants", but only a witness. Only a person charged with a crime is referred to as the "defendant". A GJ witness cannot produce their own self serving evidence unless asked, they have no 6th amendment protection (right to counsel) but have protections afforded by the 5th amendment only.
