  1. Start with dried small white navy/pea beans (widely available in Big C, Tescos's, and stores like Villa). Cook them and then bake them in an oven to make regular, or better yet Boston Baked Beans. The only important difference is that you use brown sugar for regular baked beans and molasses for Boston Baked Beans, but that makes a notable change in the taste. If you don't have an oven get a counter top one and you can make roast meats, roast vegetables, and baked good ranging from baked beans to cakes, cookies, and even flans. Cooking is easy, fun, and lets you fix meals like those from your country of origin for much less cost that what you would pay at a restaurant in Thailand.
  2. To remove solids and organics from water you use a particle filter, typically in the form of a pleated polycarbonate filter or a wound filter cartridge followed by an activated carbon filter. To remove organics you use an activated carbon filter. Note that soil particles can sometimes be found in water but are not listed below - they would be removed by the particle filter. Particles and Organic substances: Algae Bacteria Disinfectants Hair Herbicides Pesticides To reduce the TDS you can use ion exchange, which replaces dissolved metal and other ions with sodium so it can't be recommended, especially if you have a heart health concerns. Using reverse osmosis, which removes dissolved ions without replacing them with sodium, is a healthier alternative. At 300 ppm TDS your water is perfectly drinkable.   3. I had a problem in BKK with those flying rats loving the tops of my AC condensers. I bought rolls of bare wire at the local hardware store, which were very cheap. The width of the condensers was less than a meter so I just loosened a screw at each end, wrapped an end of the roll of bare wire around each screw and tightened the screws back up. This put a wire "slinky" on top of each condenser, which made it impossible for the flying rats to land on the condensers, and if they did they got entangled in the loops For a larger area use multiple coils, and for good stability clamp the coils between a couple of wood strips.
  4. I lived on a 37' sloop in Cape Canaveral, Florida for almost 10 years. It is a great way to live, and to go broke. After I retired I moved to Bangkok in 2002 and sold the boat at a loss. A boat really is a hole in the water that you try to fill with money. I was interested enough to find out that at that time that you basically needed a visa for a foreign registered boat and could only keep the boat in Thailand for less than a year without paying import duty. Docking fees were very high. At that time Malaysia was much more boat friendly with none of the silly Thai rules and more reasonable docking fees The visa fees also had a more reasonable length. Personally I'm happy I sold the boat and moved to Bangkok where my life was much less stressful and fun.

I moved from BKK to Pattaya in 2014 but when I lived in BKK I bought my medications from a pharmacy just a few doors West of the PTT station on the corner of Sukhumvit and Soi 4 - sorry but I never knew the name. It may or may not still be open but it is worth checking since the prices were much less than from hospital pharmacies and most other pharmacies. You can always stop into Bully's Bangkok pub for a meal and a drink afterward since it is only a few doors further West of the pharmacy, or wonder back to Soi 4 and the Nana Entertainment Center or just down Sukhumvit for food and a drink.

  7. A friend here in Pattaya, who was a teacher, died without a will in Queen Sirikit hospital in Sattahip. He had told me he wanted the cheapest funeral available and to give his remaining funds to a charity for children. It took weeks for me to be appointed executor. Once I was appointed executor some Thai friends of ours and I could collect the body. It was transported in the morning to the Wat Nop Thong Di Si Puet Ta Ram temple complex in Pattaya where it was placed in the crematorium. The same afternoon funeral was attended by the Thai friends, some farang friends, and some former students so a small ceremony was held before the cremation. The next morning the the remains (mostly wood ash and bones) was collected and we went to to จิตตภาวัน วิทยาลัย พระครูวินัยธรธนากร อัตตะสาโร (หลวงพ่อพูลทรัพย์), which translates as Chittaphawan College of Phrakhru Winaithornthanakorn Attasaro (Luang Por Poonsub) for disposal at the end of an ocean pier they have. It was necessary to pay/make a donation to both temples. I can't tell you the cost because the Thai friends paid for the cremation and disposal. My Thai "long time companion" (Thai legal language for common law wife) is my executor and beneficiary. I have told her I want her to do a very simple low cost cremation and dispose of my remains as she wishes, but I realize that she will do as she wishes. I just hope that she can stand up to her family and make them understand that I an not religious and don't want a fancy expensive funeral and they will loose face by insisting on one.
  8. The safest frying cookware is cast iron, ceramic coated cast iron, and high carbon steel. The good thing about these is that they can be used on top the stove or in the oven. Clean cast iron or high carbon steel any way you want with soap and water. Use a sponge/scratcher pad or stainless steel pad if needed. Rinse, dry at low temp on stove, then season. Note: a smooth bottom and walls of a cast iron cooking vessel is easier to make non-stick than one that is rough. Some people even go so far as to grind the inside smooth if it comes with a rough interior. For liquids I use stainless steel pots, and the thicker the steel the better. It is and even better if the steel is laminated around a copper or iron bottom insert to spread the heat - you can use a flame spreader instead but it isn't as good. I don't have any ceramic coated cast iron pots or casseroles but the ceramic can be difficult to keep clean. Plain steel baking pans coated with clarified butter (buy on Lazada) or other vegetable oil, and dusted with flour is usually enough, or you can place a sheet of non-stick cooking parchment in the pan - dampen it first and it will fit easier into all the corners. There are two ways to season cast iron or high carbon steel so they are non-stick, and if you do it right you won't get the black residue of burned oil. The residual oil should keep cast iron or high carbon steel from rusting if it is kept dry - I keep mine in my oven when not using either the skillets or oven. Eventually high carbon cookware becomes as black as cast iron if you keep seasoning it to keep it non-stick. 1: After applying vegetable oil to the cooking surface, preheat the pan on low heat, increasing the temperature slowly. You can place the skillet upside down on a middle oven rack at 375 degrees. Place foil on a lower rack to catch drips. Bake the cast iron or high carbon steel for about an hour and let it cool entirely in the oven. 2: To season your skillet on the stove top, place it over high heat and let it get screaming hot. Remove the skillet from the heat, and rub oil into the pan with a paper towel. Put the skillet back on the stove top over medium heat for about 10 minutes, letting the oil dry completely.   9. I went through the process of becoming the executor of a friend who died without a will. It was very involved and required the approval in signed documents sent from his family in the US and two video appearances before a judge (during COVID). It was a long process, resulting in a major delay in being able to retrieve the body and perform the creation and burial, not something I want to happen to me. If you don't give the US Embassy a contact they will trace down your nearest living relative and make them cover any expenses such as transportation of the body, an autopsy if the Thai police require one, storage of the body, and shipping of the body to the US or cremation here. Unless the relative is willing to come here this will have to be done through a Thai lawyer. I have a friend who is physically not well and suffering from Alzheimer's. I provide what care I can for him since he doesn't want to involve his US relatives. I convinced him to make me his executor but we have an understanding that the Thai lawyer will be with me every step to make sure that I follow his wishes for donating the majority of his remaining funds to charities. With the Thai will naming me as executor the process of allowing me to take care of retrieving the body and cremating it will be very smooth and fast. I will also be give access to any funds in his bank accounts at the same time. If I had not become the executor for this friend I would have encouraged him to have a will made with the lawyer as the executor and giving specific instructions on how to donate his remaining funds after the fees charged by the lawyer. Fortunately I have a very good relationship with my Thai long time companion, i.e. wife, of 20 years so I had a will made that made her the executor and my beneficiary. At 81 years old with a heart condition this was perhaps my smartest decision ever. I also have it set up that remaining funds in the US and my US bank account will automatically go to my children, one in the US and one in Canada. One thing I have learned caring from my friend with Alzheimer's is that you want to make sure you have contact information for your executor on your person. For my friend I stapled business cards for the Thai lawyers and a name card for me into his passport. Hopefully is he dies outside of his apartment the police will know who to contact. For myself I have my wife's contact information in my passport but I am also buying a Medical Alert bracelet that will have engraved on it my wife's phone number as well as medical details.

    Yeast flour

    As hotchilli said, flour and bottles of dry yeast are available in most supermarkets such as Lotus's, Big C, Villa, and Foodland. Simple bread recipes require 1% to 1.5% of the weight of flour. If you're using 1 kilo of flour, that means you need only 10 to 15 grams of yeast. For Imperial measurements about 1/4 ounce of yeast for 6 1/2 cups of flour. Be sure to proof the yeast before adding it to your flour. If you want a lighter softer bread than you get with normal flour then a good trick to use about 1/8 to 1/4 cake flour. I got a bread machine 12 years ago but it doesn't knead the dough enough so I went back to kneading by hand, which is a good workout. Perhaps newer bread machines are better. This weekend I am making Better Holmes and Garden Corn Bread to go with the chili con carny I am making. I frequently spread molasses on the corn bread to sweeten it (see last paragraph of post) when I eat corn bread with chili con carne or stew. I know this is a complete change of subject so stop here if not interested. For chili con carny I roughly follow this chili recipe - Errens Kitchen - Classic Chili Con Carne. I will only use caned whole tomatoes since I find the crushed tomatoes in the Thai brand I buy are too bitter but the whole tomatoes are fine. I usually add both chopped bell pepper and the larger green Thai chilies (about 4" long). In the morning I pour the liquid from the tomatoes into my Crockpot slow cooker (set to low) then crush the tomatoes with my hand and add them. I caramelize the onions, then add the peppers and Thai chillis, cooking until they are soft then transferring all of this to my Crockpot. Next is to caramelize (i.e. brown) the ground meat then add spices and garlic to the browned meat and heat for only a minute or two more (no longer or you may burn the garlic and make it taste bitter) before adding to the Crockpot. Next add the stock - beef, pork, or chicken stock depending what ground meat I use (try a white chili someday). I leave the Crockpot on low all day long. I soak dried kidney beans overnight then cook them separately from the chili so I can control how done they are. About 30 minutes before serving I add as much of the beans as I want to the chili, along with enough of their cooking liquid to give the chili the right consistence. Before serving always taste and correct the salt and spices if necessary. I want my chili spicy and I love the taste of cumin in chili so I usually add more of these, but then I need to cook for another 10-15 minutes so the flavors blend. Adding a bit of sugar may help to bring out the taste of the tomatoes and give the chili a slightly sweet flavor. I add apple cider vinegar when serving to offset the sweetness from the exces sugar and add a bit of a sweet/sour punch to the chili. Sour cream or plain yogurt on top, and shredded cheddar cheese if desired. Goes perfectly with the cornbread. You can get Blue Label Australian Black Strap Molasses, which tastes a bit bitter, at Villa. - I like the bitterness. These are also available: From Lazada -Grandma's Molasses Original 355 ml. You can also get Blackstrap Molasses จากกลุ่มน้ำตาลมิตรผล วัตถุดิบกากน้ำตาล (from Mitr Phol Sugar Group) Food grade สำหรับทำอาหาร ขนาด (molasses raw materials for cooking, size) 500ml from Lazada, but I haven't tried it.

I was tired of the small cheap pocket knives I had bought in Thailand that wouldn't keep an edge so I bought a 2" blade locking Buck knife at a hardware store in Merritt Island, FL back in 2002. I paid a small fortune for it but it is not one bit better than the cheap ones for keeping an edge. The blade does lock open so it can't accidentaly fold up and cut my hand so that is what I carry now. Just be aware that the police may deem a pocket knife a weapon and they can arrest you for carrying a weapon. If they do find a small blade pocket knife they most likely will confiscate it and charge you a small fine. Having a large blade like a machete under your car seat is an entirely different matter. A few years ago a couple on the way to Swampy got stopped for speeding and the police searched the car. They found a Swiss Army Knife in the glove compartment and arrested them. Fines and a missed flight. I have a couple of old Cambodian army swords that adorned my walls in BKK for years. I bought them in the Russian Market in Phnom Phen in 2002 along with a set of three cheap knock off Japanese type swords and stand for a friend. They wrapped them all up in newspaper and taped it closed. They wouldn't fit in my suitcase so like an idiot I carried the package on board the plane. It was after 7/11 but no questions were being asked in Phnom Phen yet. Once I collected my suitcase I headed out of the airport only to get stopped by the guards, who asked what the package was. I slurred my voice and very quickly said the word, "Swords.". The guard didn't understand so he asked again, with the same results. When he asked again I realized I could have a problem so I very slowly and carefully said, "Take to US." He said okay and waved me on. Lesson learned, don't try carrying swords onto an airplane. ????
  13. Old T12 or T38 fluorescent tube ceiling lights used a magnetic or electronic ballast/starter. The newer T8 or T26 versions are smaller in diameter and have a built in ballast. They have now been replaced with new LED tube lamps. Energy saving standard screw in Edison base compact fluorescent bulbs have a built in ballast/starter and electronics to boost the electrical frequency from 50 Hz (in Thailand) to thousands of Hz for greater efficiency (Wikipedia-Compact fluorescent lamp). LEDs have a built in transformer to produce the required voltage, a ballast that is called a driver, and most also boost the frequency of the current causing the LEDs to give off light so that you won't see the lamp flicker. Regular LED bulbs won't work correctly with a dimmer switch but as others have said, dimmable LED bulbs are available. Incandescent, energy saving fluorescent, and LED bulbs with standard screw in Edison bases all work directly with the voltage stated on the package and bulb, which is 220V here in Thailand. You can mix these with no problems but the colors may be different even if they say they are the same color. For example an incandescent bulb is "warm" but a warm color fluorescent or LED bulb will have different colors. The same for cool white and daylight LED bulbs vs fluorescent bulbs. Some small recessed ceiling fixtures use a lower voltage, some use 220V. Originally small two pin incandescent bulbs were used. LED bulbs are available to replace these. Remove a bulb and you will find the voltage printed somewhere on the bulb. Experience tells me that warm bulbs are more friendly in a home, white in a work environment. Daylight LEDs produce harsh lighting that I don't like. Don't mix the colors or you get strange lighting effects and different colored shadows.
  14. KhunLA is right about cast iron. If you want it to be really non-stick you need to grind the cooking surfaces down so they are smooth. The cast Meyer Iron skillet I bought from Lazada also has a rough surface so it sometimes sticks. Use a high smoke point vegetable oil (Wikipedia: Template:Smoke point of cooking oils or try using petroleum jelly (Vaseline) for seasoning. Season upside down in an oven at 400°F(200°C) to 450(230°C) for one hour or more. Place a tray underneath to catch drips. Another good alternative is heavy carbon steel cookware. Both cast iron and a properly designed carbon steel skillet (no plastic or wooden handle) can go into the oven so you can brown meat in the skillet on top the cook stove then finish cooking in the oven: How to Cook the Perfect Steak | Chef Jean-Pierre. You should fry at about 265°F (130°C). Teflon won't be a problem at this temperature. You will get crispy non-greasy fried food at 265°F (130°C). Lower in temperature and the food, especially if breaded, will absorb the cooking oil and taste greasy. Much higher in temperature and the most oils will smoke and you will get food that is burnt on the outside and under cooked inside. You can ensure that you have the right frying temperature very simply by using a non-contact thermometer like this one from Lazada: Thermometer Cooking Temperature Gun-High Temperature Non Contact Pyrometer For Food Oven Industrial. A probe thermometer can be used to determine the internal temperature of a liquid or meat (get a fast reading one from Lazada) but I prefer one that gives a continuous output like this that can be used for liquids or can be inserted into the meat with the readout outside the oven: [Ready stock] KIPRUN Digital Oven Thermometer Kitchen Food Cooking Meat BBQ Probe Thermometer with Stainless Steel Probe, Timer Alarm Clock Water Milk Temperature Cooking Tools
  15. Wheat tortillas are eaten mostly in Northern Mexican and the USA, corn tortillas in the rest of Mexico. Most wheat for tortillas is grown in the Sonora region of Mexico. Map of Mexico: Wheat Production If you want to make your own wheat or corn tortillas you will need a decent press, and for corn tortillas you need masa. Red Mill Masa is available in some stores and on-line from Lazada. A strong wooden, cast iron, or aluminum press is best (not plastic). Lazada offers cast iron and aluminum, just search for "tortilla press". For corn tortillas you absolutely need to get the right ratio of masa and water. Rick Bayless has a great YouTube video on making corn tortillas - Your Guide to Easy Homemade Corn Tortilla | Rick Bayless Taco Manual. The cooking temperature is first about 400°F (200°C) then the tortilla is flipped onto the grill at about 450° (230°C), cooked a second time, flipped once more and cooked a final time. The cooking time is about 30 seconds each time but you have to find the time that works best with the dough you prepared. After the corn tortilla puffs (hopefully) it is finished cooking and should be put into a tortilla warmer so that the steam will finish the cooking - Lazada sells some plastic ones but I found a nice ceramic casserole with a lid that is the right size, put a towel inside, and warm it up in an oven set to the lowest temperature before using it. Lift the first one or two torillas on top and eat those just those below them. Save the top two, cut them up, and fry them for tortilla soup: Episode 1204: Teaching Tortilla Soup, Rick Bayless "Mexico: One Plate at a Time". A rectangular electric griddle (if it can get hot enough), a heavy duty non-stick skillet (NOT thin non-stick aluminum), or a cast iron skillet or two (Meyers brand on Lazada is okay) can be used but I found a good enough low cost reversible cast iron griddle similar to this one on Lazada - Fityle Reversible Grill, Cast Iron Griddle. It spans two burners on my stove so I can more or less control the temperature of each end. I recommend using a non-contact LED thermometer to check the temperature such as this one: Thermometer Cooking Temperature Gun-High Temperature Non Contact Pyrometer For Food Oven Industrial. The thermometer is great for frying food too. Use a good oil that has a smoke point above about 275-285°F (135-140°C) and fry at 265ºF (130°C) (Template:Smoke point of cooking oils). Use a heavy skillet so the temperature doesn't drop much when you add the food and you will get crispy food, not a soggy greasy mess. You can buy clarified butter or ghee on Lazada for higher temperature cooking to brown the outside of meats (maillard reaction) before finishing the cooking in an oven (How to Cook the Perfect Steak | Chef Jean-Pierre). You can make either clarified butter or ghee. Separate the solids from butter before they brown for clarified butter (Perfect Clarified Butter Everytime! | Chef Jean-Pierre) but let them brown for ghee (How to Make Ghee | Chef Jean-Pierre), which gives ghee a slight nutty flavor.
  16. A medication I take can cause peripheral vision problems. I get my examinations at Rutnin Eye Hospital so that condition can be checked. At the same time I obtain my prescriptions for distance/reading and for computer/reading. If you have your prescription then ask any of the local optical shops what they would charge. One chain of stores to check is Top Charoen Optical, The shops can give you a simple exam and will order the lenses for your frames from China but the service is quick. They should also be happy to order lenses from your prescription if you already have one. Alternatively take a look at this web site, Zenni Optical Glasses I have purchased sets of the both distance/reading and computer/reading glasses in titanium frames from Zenni twice, saving a lot of money vs what is charged at Rutnin. Note: I use bifocals since I since progressive lenses make my head bob up and down like an Original Drinking Bird.
  17. Police Lieutenant Worut Wattana has my sympathy. The two cats I had when living in Florida used to bring me trophies from hunting expeditions in my back yard. That was fine except once they brought me a colorful ringed snake. There are few poisonous snakes in Florida and this one was dead but it did startle me to see it. My cats let me know they were pissed when I took the body away and disposed of it. A can of tuna for dinner took care of that and all was at peace between us.
  18. Short update: I have another friend from the USA with failing health, which is common at our ages. I finally convinced him to get a will and we met with the attorney yesterday. They gave us the advice that it was best if I was appointed executor. They also told me to send a copy of the will appointing me as executor to the US Embassy so that they know I am the contact person, not his relatives in the USA. Being executor will allow me to obtain the death certificate (with the attorney's help) as quickly as possible. Once this is sent to the US Embassy they can send back an approval for the body to be released, for cremation in this case. We have some common Thai friends that will also help with the process after I get the body release approval.

It involved papers being emailed and sent by mail back and forth to the family in the USA to give me the power of attorney. To become the executor I had to deal with a Thai court (thank goodness for the attorney). It took weeks for the court to finally appoint me the executor and the US Embassy to agree that the body should be released from the hospital where my friend passed away. I had to retrieve the body and oversee the cremation and disposal of most of the ashes - a small portion were sent to the family, which was another difficult task (ask me for details if you want to do this). I had a Thai couple of friends who gave me incredible help otherwise I wouldn't have know what to do. Fortunately the deceased left enough money to cover these expenses. NOTE: If a US citizen dies outside a hospital the body must be transported to the Police Hospital in Bangkok for an autopsy then the body is stored until the US Embassy releases it, etc. Naturally all these things must be paid for by the executor or the family. Don't even ask what happens if the executor or family can't/won't cover the expenses. My advice is simple: If there is a will appointing you the executor then get an attorney to help, or at a minimum get some Thai you are close to to help with the funeral. If there isn't a will appointing you then get the family to appoint an attorney as the executor and let them deal with the details. Another friend of mine died in a hospital two years ago and left a Thai as his executor - and beneficiary. Everything was done in about four days. I also knew the Thai but they didn't even bother to give me a notice about the cremation or disposal of the ashes. The Thai and her family sold everything they didn't want and disappeared with the money two weeks later. I'm sure it is gone into booze and gambling by now, with the family to living in a ramshackle hut.

  21. A quick follow up. The ocean side of the Soi Bukahaow Market is open most (all? ) days of the week. You can buy prepared food, fresh fruits and vegetables, some clothing, and reading glasses there. Don't know if you can buy meats or not daily. The size of phone screens can vary so the size of the letters on a vision test chart on your phone can vary, which may effect the results. It is better to use a printed reading chart. About 50' (20m) from Pattaya Thai on Soi Bukahaow there is a open air shop selling reading glasses on the ocean side. Bring up the chart, put on a pair of glasses, and cover your right eye. Find the pair that is strong enough to let you see the 20/20 line clearly, but not any smaller, with your left eye. Now repeat the process for your right eye. Chances are that you will need different strengths for the left and right eyes. Buy at one pair, or more pairs, of glasses for each eye - they are only 50 Bt/pair. MAKE SURE THE GLASSES HAVE EXACTLY THE SAME FRAMES! Take them home and push out the right lens of the pair for your left eye. Push out the left lens of the right eye pair. A little oil will make popping lenses out of, and later into the frames easier. When finished you can clean the oil off by rubbing in a little dish washing liquid then rinsing. Now put the left eye lens from the right eye pair into the right opening of the left eye pair and the right eye lens from the left eye pair into the left opening of the right eye pair. Push the lenses in from the inside of the frames. This sounds confusing but you are just swapping lenses between the two pairs of glasses to give you two pairs of reading glasses with the proper corrections for each eye. As a bonus, buy a pair with the greatest diopter value and a pair that has a lower diopter value equal to the difference between your eyes. Repeat the above process and you have two pairs of magnifying glasses that will let you get closer to what you are working on for fine work.
  23. I used Android boxes for years before a friend gave me a small Windows 10 "box" computer (about 4.5" x4.5"x1.25" in size) a couple of years ago . It wasn't powerful enough to run an Android emulator but I found I didn't need Android for what I use the computer for - internet, YouTube, and VLC for downloaded TV shows. I used a Bluetooth mouse and keyboard with it and it is used my TV as the monitor and for showing videos. I recently bought a BMAX B2 Plus box computer as a replacement. It is about the same size as the older one but 2" high. It came with Windows 11 and a 1 Terabyte Solid State Drive for about 9000 Bt. Windows 11 is a royal pain in the back side so I recommend you replace it with Windows 10 (Google for how to do this). There are many models of BMAX box computers listed on Lazada so check them out an pick out the one you want. I have encountered one problem with my BMAX - a jumping cursor, usually when using video applications such as YouTube or VLC. After all the suggested fixes found on Google failed I finally traced the problem down Windows 11 having this problem when I had my 1 Terabyte WD Passport portable hard drive plugged into the BMAX. The solution was simple, unplug the Passport. Now I only use the drive or a memory stick to transfer files to the internal 1 Terabyte SSD and do YouTube or use VLC with files on the internal SSD files when the Passport or stick isn't plugged in. One advantage of this solution is that it gives me a backup Windows computer should my larger and more powerful desktop computer fail.
  24. Funerals are also extremely expensive. When my mother in law passed away it was a multiple day affair at the local temple. Family and friends fixed meals at the temple for those days and non-alcoholic drinks were supplied. There were ceremonies at least three times a day. The final day many friends and lots of family showed up for the last ceremonies, and at the cremation memorial gifts were given to one and all. The next day was the only sensible one in my opinion - the ashes were collected, blessed, then disposed of in a local river. After my mother in law's funeral, being an atheist, I made it clear as possible to my wife that I I don't want her wasting money on ceremonies. I want the fastest, simplest, and cheapest cremation available, and she could simply dispose of the remains as she sees fit. Of course I won't be able to argue with her once I die so what will really happen will remain a mystery to me.
