You might want to keep up to date on possible Covid restrictions on the Turkish Airlines website, I suspect they will keep it updated.
Certainly when my wife and I traveled to Istanbul, pre Covid, she didn’t need a visa but was asked how long she was staying, they also asked to see details of her flights out of Turkey.
We enjoyed Istanbul very much.

There are no interviews for Standard Visit Visas, applications are normally decided on the strength of the application and supporting evidence. -

bigyin makes some valid points, I would add that you don't apply for a visa for this lady to visit you in the UK, she's the applicant and it's her that needs to satsify the Entry Clearance Officer, the person who decides whether to approve her application, that she's a genuine visitor, her proposed short trip is affordable and that, on the balance of probabilities, she will would return to Thailand at the conclusion of her proposed visit.
As bigyin points out the ECO will base their decision on hard facts, pictures of you lounging on a beach are meaningless and prove nothing, in fact photos are not accepted with applications, and neither is proof of ownership of a car.
An unregistered business is of little help, ECO's, even though they are not based in Thailand, are fully aware of the current position of bars here, they are hardly a reason to return.
Your girlfriend will certainly need to prove her strong ties here, an ECO may well consider a plot of land to be meaningless, unless she owned a house on it, employment or a fully operational business may well do the trick, with evidence of who would operate her business during her absence, but she seems to have neither.
You could of course provide financial support for her proposed visit, you would need to satisfy the decision maker that it's affordable and reasonable to do so, and submit evidence. Evidence of two way communications, insitgated by you both, may help satisfy the decision maker that you're in a genuine relationship.
I personally think she would have an uphill struggle in getting her application approved, but a robust submission with strong ties to Thailand could work.

I'm pretty sure that it's just Thailand that require the MFA stamp, other countries just need certification by the person doing the translation.

Visas are dealt with by the UKVI, not Consular staff.
You’ve already received advice prior to asking here,
Your partners visa is valid up to 23rd May, she would not be admitted to the UK using that visa after that date, in fact she probably wouldn’t be allowed to travel.
if she arrived at the UK Border before that date, the Border Force Officer would only allow her Leave to Enter up to the expiry date of her visa.
You previously asked about extending her stay in the UK, and the limited criteria, and the application fees have been explained.
I’ll close this thread, you may continue via your original thread if you seek further clarification.

She can buy from either an insurer here in Thailand or an insurer in any Schengen Member State.
A Swedish insurance company will probably provide better cover than a Thai company, though VFS may well encourage her to purchase from them, and whilst this is not a requirement VFS have been known to insist on it in the past.

@Tazmono she can only apply to extend her leave to remain in the UK for a very limited number of reasons, what you describe isn't one of them, she would need to leave on or before the visa expiry date.. The fee for applying to extend would be £993.
When you can extend your stay
You may be able to extend your stay if you have permission to be in the UK for less than 6 months. You can extend your stay up to a total of 6 months.
You can only apply to stay in the UK for longer than 6 months if you’re:
- a patient receiving medical treatment
- an academic and you still meet the eligibility requirements
- a graduate retaking the Professional and Linguistic Assessment Board (PLAB) test or doing a clinical attachment

No, that advice is wrong.
A person holding a UK Visa, must leave the UK on or before the expiry date printed on the Visa Vignette.
Most visas are multi entry, and your wife must leave before the visa expiry date.

The UKVI recently made a change for the uploading of documents, maybe this is causing the problem.
Who can use the self-upload service
If you use the ‘UK Immigration: ID Check’ app to scan your identity document, you’ll use the self-upload service when you apply.
You cannot use this service if you have your fingerprints and photograph taken at a visa application centre (VAC) or UK Visa and Citizenship Services (UKVCAS) service point.

He doesn't need to supply flight and insurance evidence, the UKVI specifically advise against purchasing purchasing non refundable flights until a visa has been issued, and I don't think there's any point purchasing insurance until the visa is issued, either way the UKVI don't want to see evidence of those.
He, or his mother, should concentrate on evidence of his life in Thailand, the school certainly helps.
What I'm not sure about is there maybe something formal his mother needs to provide, others may be able to advise.

I sent a letter recorded delivery to my bank in the Isle of Man last month, it cost me 125 Baht.
I posted it in Hua Hin on the 19th Jan, it was handed over to the air carrier on the 22nd and arrived in London 1st Feb, it was delivered in the IoM on 3rd.
