What will happen if I travel outside and return to Thailand a few days before my extension expires (currently multi entry). Hearing many conflicting stories about another years stamp to a few days!!  Grateful for any advice ?

If you have an extension of stay and a multiple re-entry permit you will be stamped into the country to the date the extension ends every time you enter the country.

Another year entry would only be for a OA visa that allows one year entries.

A few days could be if that was all that was still remaining on the permit to stay the re-entry permit was issued for.

Thanks ubonjoe. I thought it was Too good to be true.  Will go through normal chanells to reapply for next year.
