I'm stamped in until January 28 and need an extension until February 6th when I fly back to the UK.

 

Will I be able to get the extension an extention at Jomtiem immigration as I've just read that I can only get an extension if I have 15 days left on my trip (I will arrive in Pattaya on Monday evening)

If you have a tourist or visa exempt entry you can apply for a 30 day extension unless you have already gotten one. There is no minimum number of days to do the application.

If you have already done the extension you can apply for an extension, pay 1900 baht and be granted 7 days to leave the country after the application is denied.
