wishing to stay for longer. Any help will be greatly appreciated : I have read the rules etc for a non-immigration Visa but was wondering if this will only apply to jobs that you won't take away from Thai Residents (for example English teachers) if we were to perhaps, hypothetically speaking, get a job in a bar, could we then apply for this type of visa?

also any information (telephone numbers or addresses) regarding Visa agencies (where they actually apply for the visa for you) would also be a tremendous help.

you need search-out the restricted jobs for non-Thais. It is very restricted.

Bar work is a restricted profession and a WP is not going to be issued IMO..

But separate work permit (Labor dept) issues from immigration issues first of all.. If your here on holiday use tourist visa's.. If your here for many many months then you run into the same issues of chasing non imm O's from friendly consuls back home or using tourist visa's and extensions every 3 months.

What length 'holiday'..

Ohh and visa agents (who get visa's for you, while you remain in Thailand) is a highly illegal practice.. Beware.
