I just checked and Tesco Lotus has bamboo shoots in a brine, but it is in a plastic bag. I think I have seen them in a jar too. Not sure where to find water chestnuts, but most likely you can find it fresh too. Also, you might be interested to know that cloud ear fungus can be found at the local fresh markets. Isn't that the truth! At our house in the U.S, we have a small grove in the yard. My wife has scouted out other nearby sources as well. We only get them in the spring.
