Had some left over chicken tonight and was making sandwiches, thought it would be nice to make some stuffing. Too late to put in the chicken of course lol.

Did a very simple thing and it turned out so good I thought I would share it. We buy the whole BBQ chickens you can get here sometimes on the side of the road

(not the Gy ann tiny sparrows halved / spatchcock and cooked to death)

 

3 cups Panko crumbs (or old bread broken up)

teaspoon chicken powder

1/4 teaspoon salt

1/2 spoon white pepper

heaped teaspoon sage and Thyme (or mixed herbs or what ever you like)

Half an onion chopped small and fine

Clove garlic chopped fine

1/2 beaten egg

 

Mix well then add a small amount of water until it is becoming stodgy, not wet

The breadcrumbs will suck a lot of the water up after a few minutes, add more if needed. Consistency of soft dough

 

I simply made like a patty about 6" round 1" or so thick (will rise a bit). Sprinkled some oil over the top and 

placed it in my frypan in the oven with the top element on (but not too close) about 180 for 20 minutes

 

Results were incredible. Really crispy top and soft inside like stuffing should be. I am sure you could make it on the stove

in a pot on lowish temp with the lid on. The crispy bit would be underneath. Just watch it the first time as everyone's ovens

are different. Have made it with chopped cashew before was great, add anything you like ????
