Has anyone ever done this?

I'm from the US.

Would it be possible for me to Fed Ex:

1) passport

2) Tourist visa application form(I'd apply for a double entry tourist visa)

3) cashiers check for the application fee

.............

I realize it's not standard to mail a passport oversees but as long as I had a photo copy and stayed low for a week here in Thailand would this work? Would it be better to mail it to someone back home(family) and then have them mail it to the consulate? I'd like opinions on this. Thanks.

actually just moved down and was reading that post on the "ghost visas" It also came to mind that I wouldn't have an exit stamp showing I'm out of Thailand.

Any particular reason why this is illegal though? I mean...it would save allot of hassle and makes things a bit easier. I know that you're able to mail your passport to the consulate while in your home country. Why should this be so different?

It's been tried and results posted on Thaivisa.

The person actually got a multi non-o from a consulate in Europe and got his passport back. BUT. The unused visa was spotted by the immigration chap at the exit post and was cancelled by him because it was obvious that the visa had been issued whilst passport holder was inside Thailand.

You are supposed to be in a country within the jurisdiction of the visa issuing embassy. You MAY get away with it by applying from a third country (Malaysia maybe) but it would still be technically illegal.
