Operators in Hanoi struggle to meet modern hygiene standards due to limited space and high rents. Some, like Bui Chi Thanh of Pho Thin Bo Ho, have invested in hygiene improvements to meet growing expectations. Thanh relocated to Hang Voi Street and spent over VND100 million (US$3,800) on upgrades, acknowledging that cleanliness has become crucial for younger patrons. Looking forward, more eateries may need to invest in hygiene to attract a broader customer base. While some business owners, such as Hoang Minh, suggest formal restaurants are better equipped for such standards, many street vendors might find these upgrades prohibitively expensive.
