I have a retirement visa which started last mid -October. If I choose to go the monthly, 65k/m route which I can do between now (June) and Oct. this year.. and can prove the money came from the US with bank slips...

Would these five months be enough to satisfy immigration? Or will they be looking for twelve months of documentation?

To be more specific I'm referring to "renewal" of retirement

The retirement extension of stay using monthly income of 65k requires a letter from your Embassy. There is no time requirement - you enter onto a form your current pension/income and it is notarized. If immigration requests supporting documents you provide whatever you have - there is no set rule or time.

Must they be annuitized or pension payments, or will if work if I set up a monthly automatic wire transfer order at my bank?

The US Embassy paper is what you say you receive from pension or income (or some such wording). If you put a figure down and have bank transfers to back it up I am quite sure Immigration would accept that, if they were to check.
