Do you have an extension of stay for approx 1 year? Or have you been doing 90 day border runs?

I just went through thevery same process.

I had to return the old work permit and at the same time the new company applied for a new work permit.

Upon returning the old WP, you have to go to Immigration immediately after and cancel the non-immi-b. This grants you another 7 days in Thailand.

Simultaneously, you submit to immigration the new WP application receipt and they give you another 30 days on consideration.

Once the new WP is approved, you get a new 1 year non-immi-b and this allows your WP to be extended until the visa expires.

Raro, just to satisfy my curiosity: did you get a new work permit book (I believe it is green) with the new work permit? Or was the new work permit stamped in your old book?

(I am making a distinction between the work permit (Labour Department's entry in the book) and the book itself)
