Oven Roasted Chickpeas

The secret?

Got to be dry otherwise they'll just steam and won't get crispy.

So I dried and dusted them with some potato starch to make it extra crispy.

Skipped the olive oil and just put seasoning on them (garlic, onion powders, sea salt, rosemary)

After roasting added mild paprika so it wouldn't burn.

Love the tortillas with chia seeds.ย ย 

Supposedly you can get them in Mexico too, but I never saw them.ย 

Mexicans just drink an agua de chia with lemon juice and sugar drink to cool down but they have no idea chia seeds are a โ€œsuperfoodโ€ you should probably be eating every day.

More arugula and sprouts.

Then saute some garlic, onions and mushrooms.

Add a little pizza cheese and lots and lots of grated Romano cheese, mmmmm.

Then some of the leftover Green Goddess salad dressing from the other day for dipping.

But cranking up the Mexican-ness with some New Mexican hot sauce added to the sauce.

Chocolate Trinidad Morunga Chile peppers have flavor galore and are super hot if you use too much.ย  My sweet spot is 1-3 drops.
