What's the difference? Are they interchangeable?

thai2english.com says ซักที is "just once, once, even once" and สักที is "once".

It's the same word.. but สักที is a written-formal language while ซักที is spoken language everyone use.

I wouldn't have defined the meaning differently as in thai2english.com.

the meaning should be identical. In speaking, one does use both ซักที and สักที.

However ซักที may be used with more emotion.

For example: Mr. A is waiting for his date. After 5 minutes past, he may have said "she is not here yet" as ยังไม่มาสักที

After 1 hour past, he likely would have said the same "she is not here yet" as ยังไม่มาซักที ! It is very unlikely that he would still say ยังไม่มาสักที .

สัก/ซัก is seen shortened as ซะ, as in ซะหน่อย = สัก/ซักหน่อย, ซะที = สัก/ซักที.

Note that ซะ can also be an abbreviation of เสีย when used as an imperative particle, e.g. ไปซะ (from ไปเสีย).
