It may seem a stupid thing to be asking but it seems to me that the rulres are always changing (though never for the better it seems).

I'm going to thailand at the end of march and I'll coming back the last day of april - a total of 33 days; also, I'm going to be going up to Macau for a couple of days in that period. Will I need a visa? I know that before I could have just got a 30 stamp, and seeing as I was taking a trip out of the country, get another 30 stamp on that way back in. But if I'm not mistaken, it doesn't work like that anymore does it? I take it I'll probably have to get a multi entry visa.

If at the time you check in for your flight in the UK you have a ticket for your flight to Hong Kong within 30 days from your arrival in Thailand you do not need a visa. Otherwise you should get a single-entry tourist visa for your first entry into Thailand, then a visa-exempt entry for your second arrival in Thailand.
